Add this delicious and simple carrot ginger juice made in the blender to your morning for a bit of sunshine in a glass! Pair with your favorite breakfast entree like oats or eggs for a healthy balanced breakfast.

Start your day on a bright note by adding a glass of this sunny carrot and ginger juice that can easily be made in a juicer or blender. I love whipping up a glass of this carrot juice or my blender beet juice whenever I have a few extra veggies on hand that need to be used up – it’s a great way to prevent food waste!

Vegetables juices like this one are a delicious way to sneak in extra nutrients into your day. Since veggie juices aren’t a good meal replacement, I like pairing this carrot and ginger juice with something like my lemon blueberry baked oatmeal or my easy tofu scramble for a healthy breakfast.

Ingredients You’ll Need

  • Carrot: carrot is the primary ingredient in this juice and adds a delicate sweetness.
  • Fresh Ginger: fresh ginger is best since the flavor is so much stronger than ground. Any leftover fresh ginger can be used in other recipes like this vegan cashew stir fry or rainbow salad with quinoa dressing.
  • Apple: adds a bit more sweetness to balance out the ginger and lemon. I like to use a sweet-tart apple variety like pink lady or honey crisp.
  • Lemon: adds brightness and zip to this carrot juice. Fresh lemon juice is best. If you don’t have lemon, you can use the juice from 1-2 limes in a pinch but the flavor will be a bit different.

Variations

  • Add Turmeric: add even more antioxidants by adding a 1/2 inch piece of fresh turmeric or 1/4 to 1/2 teaspoon ground turmeric before blending.
  • Add a Kick: before blending, add a pinch of cayenne pepper for a spicy kick.
  • Add more Citrus: instead of apple, add an orange to the blender before mixing.

Step by Step

Step One: Add all of your ingredients to a blender with some water.

Step Two: Puree until smooth. You can serve straight from the blender or strain with cheesecloth to remove the pulp.

Step Three: Add a fine mesh strainer over top of a bowl or measuring cup. Line with a piece of cheesecloth and filter carrot juice through to remove the pulp.

Step Four: Pour juice into glass and top with ice (if desired). Serve immediately or store in a jar in the fridge.

  • Have a juicer? Simply add all of your ingredients to a juicer and you will have fresh carrot ginger juice.
  • Serving suggestions: Serve over ice for an extra chilled juice or serve with a slash of sparkling water for some fizz.
  • Happy hour anyone? Make it a mocktail or a cocktail! This carrot ginger juice is delicious with a splash of sparkling water and a shot of gin or vodka if you want to make it into a cocktail.

Can carrot juice detox you?

Carrots are loaded in health-promoting nutrients, but no food (including carrots) can detox your body. Instead, our bodies are equipped with our lungs, liver, and kidneys which do any “detoxing” or eliminating waste that we need.

What is the best time to drink carrot juice?

There are no specific benefits to drinking carrot juice at a certain time of day. Add a glass to your diet whenever it fits into your routine – morning or night.

Does carrot juice reduce belly fat?

No, simply drinking carrot juice does not reduce belly fat. No food (even carrots) can specifically target weight loss in certain parts of the body (belly, hips, etc). However, regularly including lots of fruits and vegetables into your diet can help with weight management.

Health Benefits of Carrot Ginger Juice

  • Orange carrots are high in beta carotene which the body converts to vitamin A. Vitamin A is important for good vision, growth & development, and immune function.
  • Carrots are also a good source of vitamin K1 (supports bone health), potassium (helps with blood pressure management), and vitamin B6 (important for metabolism).
  • Lemons are a great source of vitamin C which is important for healthy skin as it supports the production of collagen, the structural component of skin, cartilage, and more. 
  • Ginger is a powerful antioxidant food thanks to bioactive compounds called gingerols. Antioxidants are important because excess oxidative stress in the body can lead to chronic diseases over time.

Instructions

  • Add all of the ingredients to a juicer and process. You can also add to a blender and puree until smooth.

  • Transfer blended carrot mixture to a fine mesh strainer lined with a piece of cheese cloth over a large bowl. Use a spatula to press all the juice out of the pulp. (I also twist up the top of the cheesecloth and press the pulp with my hands too.)

  • Serve over ice. Add a splash of sparkling water for some bubbles!

Notes

  • Recipe makes about 14 ounces of juice total. Store leftovers in a jar with a lid in the fridge. Keeps up to 2-3 days in the fridge.
